Jade Leaf Infusion 1/2 oz. yuzu 1 egg white Garnished with 3 drops of West Coast Wave Bitters garnish with 1 shiso leaf (for flare) Jade Leaf Infused Sake: 1 tsp Jade Leaf tea 1 cup water 2 cups sugar 1 tsp Hawaiian sea salt Preparation: Steep the Jade Leaf tea leaves with 1 cup of water Add to 2 cups of sugar and reduce to make a rich 2-1 syrup While reducing, also added a teaspoon of hawaiian sea salt - this adds additional umami to the syrup Cool syrup, and stored for later use West Coast Wave Bitters: 2 tsp West Coast Wave fruit tisane 2 cups high proof spirit of your choice Preparation: Steep the West Coast Wave in high proof neutral spirits for a week After steep, blend with a variety of additional botanicals to increase the depth of flavor.
