Filipino chicken adobo is the national dish of the Philippines, perfect for this hot summer! There are many variations, I sometimes add boiled eggs and fried tofu in with some black sweet soy sauce, oyster sauce, ginger and caramelized pineapple to get amazing thick dark glaze for my fried rice and sautéed vegetables. I used my everyday ingredients in my pantry and made Filipino pork adobo with my students today. It was us much fun! Some students used chicken thighs, some used pork belly and some used both in this recipe. All turned out so well. I hope you give it a try and let me know what you think! Recipe : 2.5 lbs pork belly, pork butt boneless or chicken thigh 1 tsp kosher salt 3 Tbsps cooking oil 2 Tbsp black sweet soy sauce 2 Tbsps oyster sauce 1 Tbsp black pepper 3-5 slices ginger 5 bay leaves fresh or dried (not the end of the world if you don’t have) 1/2 cup soy sauce 1/4 cup rice vinegar 2 tsp chicken bouillon + 1 cup hot water or use 1 cup of chicken broth. 1 onion (diced) 10 cloves garlic (crushed) 3 Tbsp brown sugar 1 fresh pineapple or 1 canned pineapple (drained water off with sifter) Green bean adobo Green beans or vegetable of your choice 2 tsp cooking oil 3 cloves crushed garlic 4 Tbsp adobo sauce Some roasted shaved almonds
