The kids at Mercy Home for Boys & Girls are back at school this week. You know what that means? They're hungry! In this 3-part series of “Noshing with Nyah,” co-worker Nyah creates after school snacks perfect for munching while doing homework! In this first video, she makes plantain chips two ways: Savory and Sweet. Recipes below: Savory Plantain Chips: 2 Green Plantains 2 tbsp Olive Oil Salt and Pepper to taste 2 tsp Oregano 2 tsp Curry Powder 3 tsp Smoked Paprika Sweet Plantain Chips: 2 Ripe Plantains 2 tbsp Olive Oil 1 tbsp Brown Sugar 2 tsp Allspice Salt to taste 1 tbsp Coconut Flakes Directions: Preheat oven to 375 degrees. Slice plantains and place in mixing bowl. Mix all ingredients together, pour over raw plantains. Spread on a baking sheet and bake at 375 degrees for 14-18 minutes, checking after 12 minutes. You may not be able to fit all the plantains on one baking sheet, so you can bake these in 2 separate batches.
