This North Indian-style curry is rich, tangy, and perfect with naan, rice, or roti. Ingredients: For the Marinade: 500g chicken pieces (bone-in or boneless) 1 cup yogurt (dahi), thick and fresh 1 tablespoon ginger-garlic paste 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon garam masala Salt to taste For the Curry: 2 tablespoons oil or ghee 1 large onion, finely chopped 2-3 green chilies, slit lengthwise (optional for extra spice) 1 teaspoon cumin seeds 1 bay leaf 1-2 cardamom pods 1-inch cinnamon stick 1 large tomato, finely chopped 1 teaspoon coriander powder 1 teaspoon cumin powder Fresh coriander leaves, chopped (for garnish) Instructions: Step 1: Marinate the Chicken In a mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Add the chicken pieces and coat them well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for a richer flavor). Step 2: Cook the Curry Heat oil or ghee in a deep pan over medium heat. Add cumin seeds, bay leaf, cardamom pods, and cinnamon stick. Sauté for a few seconds until fragrant. Add the chopped onions and green chilies. Cook until the onions turn golden brown. Stir in the tomatoes and cook until soft and oil starts separating from the mixture. Add coriander powder and cumin powder. Mix well. Step 3: Add the Marinated Chicken Add the marinated chicken along with all the marinade to the pan. Sauté the chicken on medium heat for 5-7 minutes until it’s seared and the marinade begins to thicken. Lower the heat, cover the pan, and let the chicken cook for about 15-20 minutes, stirring occasionally. Add a little water if the curry is too thick. Once the chicken is cooked through and the curry reaches your desired consistency, adjust salt as needed. Step 4: Garnish and Serve Garnish with freshly chopped coriander leaves.
