Steven Rinella - MeatEater Canadian Goose Meal using the Real Avid Revelation Lighted Knife

Steven Rinella is in New Zealand and is happy to discover that they have an introduced population of Canadian Geese. When making a meal with Canadian Geese, Steven plucks the bird because a good part of the meat is the skin and fat. He then uses the Real Avid Revelation Lighted Knife to cut it in to nice little narrow strips. With that fat and skin on, saute it over hot heat for a very short period of time, you want it bloody but cooked. It is worth the time, this is the way to do Canada Geese.
