🍲 Chicken Congee — My Version Here’s my comforting, home-style take on chicken congee — a warm, soothing rice porridge made with tender chicken, fresh aromatics, and simple ingredients that come together in one cozy bowl. My version is easy, hearty, and perfect for cold days, sick days, or anytime you want something comforting and satisfying. It’s a humble dish, but full of flavor, love, and goodness in every spoonful. 🍲CHICKEN CONGEE MY WAY 🛒 Ingredients • Leftover rice • Chicken • 1 small onion, diced • 3–4 cloves garlic, minced • 1–2 inch piece ginger, sliced or julienned • 4 eggs (boiled) • 4–5 cups vegetable broth (or chicken broth) • Salt & pepper, to taste • Green onion for garnish 🍳 Instructions 1. Sauté aromatics • In a pot, heat a little oil. • Add ginger , onion and garlic; cook until soft, lightly golden and fragrant 2. Add the chicken • Stir in cooked chicken. • Season with salt and pepper to taste. • Simmer another 5–8 minutes. 2. Pour in broth • Add vegetable broth and bring to a gentle boil. • Lower the heat and simmer, stirring occasionally to prevent sticking. 3. Add the rice & egg • Add leftover rice to the pot. • Stir to break it up and coat it with the aromatics Let the rice soften until it becomes porridge-like (10–15 minutes). • Stir and simmer then Add boiled eggs, Simmer another 5–8 minutes. 4.
