Palak paneer, a rich and healthy Indian gravy served as a side for roti, chappathi, or white rice. Ingredients : For marination: Paneer - 250 gms Salt-1 Tsp Turmeric powder -1/2 tsp Red Chilli powder - 1 tsp Garam masala - 2 tsps Kasthuri Methi - 1 tsp For the gravy: Coconut oil - 3 tsps Onion - 1 Cup Tomato - 1 Cup Almonds - 5 nos. Green chilli - 2 Ginger garlic paste - 1 tsp Spinach - 10 cups In an instant pot, in off mode, add 3 tsp coconut oil. Then add 2 tbsp water. Add 1 cup of onion and spread it as first layer. Then add tomatoes and spread them as second layer. Add almonds, green chillies and ginger garlic paste. Add washed and cleaned spinach. Place the marinated paneer in a bowl on top of the spinach. Close the Instant pot lid. Steam mode - Pressure high - 1 minute - Sealed position Once the timer is done, release the pressure manually. Remove the paneer bowl. Blend rest of the ingredients into a fine puree. Then add the paneer mixture into the gravy and mix well.
