This is an authentic Mangalorean Konkani recipe, also called Khotto style idli, made with rice and fresh coconut. Naturally fermented and steamed to perfection, these idlis are healthy, light, and absolutely delicious. Serve with Roce, chutney, sambar, or any curry for a perfect breakfast, festive special, or everyday meal. ✅ 100% Natural Fermentation ✅ Soft, spongy & tasty ✅ No chemicals or shortcuts In this video, I’ll show you step by step how to make Coconut Idli without urad dal – easy, tasty, and healthy. Serve it with chutney, sambar, or curry for a wholesome meal. Ingredients: 2 cups Idli rice 1 tsp Fenugreek seeds 1 cup leftover rice 1 cup fresh coconut Salt to taste Water to grind Method Wash and soak the Idli rice and fenugreek seeds for 4-5hours. Prepare the batter Grind soaked rice with fenugreek seeds adding little water to a smooth, thick batter (like idli batter). pour the batter into a wide pot. Add leftover rice and coconut along with water and grind smooth batter. here you can use coconut water (ನರ್ಲಾಚೆ ಉದಾಕ್) Fermentation Mix well and whisk it one direction for 10 min. here you can use your hands to whisk too. Cover and keep in a warm place for 8 hours or overnight until it doubles and turns airy. Steam the Sannas Add little water into idli steamer or thondor (ತೊಂದೋರ್) Grease small bowls or an idli mould with oil. Pour the batter, filling 3/4th of each mould. Steam for 12–15 minutes on medium heat, until a skewer or toothpick inserted comes out clean. Cool and serve Allow to cool for a few minutes before unmoulding. you can use wet cloth on top of the moulds Some Tips Ensure batter is neither too runny nor too thick—consistency is key for soft, spongy sannas. It helps the microorganisms distribute evenly throughout the batter, ensuring the whole batter ferments at the same rate. ✅ Activates Natural Fermentation Agents Whisking helps release the natural enzymes present in rice, aiding in breaking down starch into simpler sugars, which are food for microbes during fermentation.
