No mixer, no hand kneading, no expensive equipment. This is the classic folding method many of us remember from childhood, made easy for any home kitchen. In this video, water and yeast are mixed first, then bread flour and salt are added. The dough gains strength through gentle folding, not kneading. After resting and rising, it is shaped carefully without pressing, baked with steam, and finished with a beautiful crackling crust. Ingredients: 455 milliliters water (15.4 fluid ounces / close to 2 US cups) Water temperature: 19°C / 66°F 8 grams dry yeast (2 teaspoons) 600 grams bread flour (21.2 ounces / 5 US cups, about 12% protein) 8 grams salt (1½ teaspoons) Important notes: Every flour absorbs water differently, so you may add slightly less or slightly more water if needed. The dough consistency should look exactly like it does in the video. For steam, place a bowl of boiling water on the bottom of the oven.
