Ingredients: 2 penters (approx. 4 kilograms) of rice 1/2 penter of tomatoes 1200g of tin tomato Salt to taste Seasoning cubes Spices Chicken Bay leaf Groundnut oil Green beans Instructions: Preparing the Chicken: Start by cooking the chicken. Season it with a mix of roughly blended onions, peppers, seasoning cubes, and spices. Let it cook until it's tender and flavorful. Making the Stew: While your chicken is cooking, wash and blend the pepper mix, which includes tomatoes, otarodo pepper, shombo, and onions. Boil the pepper mix and allow the water to evaporate. Fry the seasoned chicken until it's golden and set it aside. In the same pot, using the chicken-infused oil, sauté sliced onions and add a bay leaf. Add the tin tomatoes and fry until the sour taste disappears. Mix in the pepper blend and spices, and stir well. Pour in the meat stock from the cooked chicken. Allow it to simmer and thicken slightly. Preparing the Rice: Parboil the 2 penter of rice and set it aside. In a large pot, add water, the fried stew, salt, crayfish, and seasoning cubes. Remember to keep some stew for later use. Mix everything together and let it come to a boil. Add the parboiled rice and stir to combine. Cover and cook until the rice is almost dry. Add the reserved stew on top and some butter (optional) for extra richness. You can also add onions according to your preference. Cover the pot and let it cook until a delicious burnt flavor develops. Final Touches: After about 15 minutes, open the pot, give the rice a good stir, and it's ready to serve.
