Buffalo Chicken Protein Bowls-New Year, New You! I love taking items I would order when eating out and turning them into a protein bowl. It’s become a bit of a game for me. How can I make something unattainable, healthy, and fun to eat? Buffalo wings are a favorite in this family. Taking that flavor and infusing it in any way creates a meal so much better. Wings aren’t a meal that I shy away from, honestly. But I don’t want the mess all the time, and making a protein bowl combines the best of both worlds. Ingredients Buffalo Chicken 4 boneless, skinless chicken thighs 1/2 cup GF Buffalo Hot sauce (we like Primal Kitchens) ¼ cup melted ghee or butter 1 tsp garlic powder Salt and pepper to taste Ranch Dressing 1/2 cup sour cream or Greek yogurt 1/2 cup mayo ⅓ cup milk 1 tsp dill 1 tsp garlic powder 1 tsp dried Italian seasoning ½ tsp onion powder salt and pepper to taste Remaining Ingredients: prepared Quinoa 1 cup diced cucumber 1 cup matchstick carrots ½ cup diced red onion ½ cup Blue Cheese crumbles, optional ¼ cup chopped green onions Baby spinach Instructions Make the ranch dressing: Combine all ingredients in a bowl and whisk until well combined. Store in the fridge until ready to serve. Assemble your bowls: Add some rice, shredded buffalo chicken, cucumbers, carrots, tomatoes, and red onion to a bowl. Drizzle with the ranch dressing and top with blue cheese crumbles and green onions. Enjoy!
