Featured in this Episode: MASTER COOKBOOK RECIPE # 528 FRIED CHICKEN, MUSTARD Ingredients: peanut oil chicken pieces (bone-in, skin on) if using breast piece, half each one in half Add the following to a Pie Plate and whisk well: 1-1/2 cups self-rising flour 2 tsp Chris’s Special Seasoning, Recipe 597 (see below) 2 tsp ground mustard Add the following to Gallon Zip Lock Bag: Chicken pieces and plenty of yellow mustard Instructions: Let chicken sit in mustard at room temp. for one hour. Then coat each piece with a flour mixture and let it sit for 10 minutes before frying. Pour peanut oil into a deep iron skillet or wok, filling it about 3 inches deep so the chicken can fry in deep oil. If you do not have a deep enough skillet or wok, use a large pot. Preheat the oil to 350°F. Drop the chicken in and fry for 18 minutes for thighs. I prefer to flip them after the first 8 minutes and reduce the temp. a bit for the second fry so they do not get too brown. Remove the chicken and place it on a wire cooling rack with parchment underneath or paper towels to catch the oil. Do not rest the chicken on paper towels. Let the chicken rest and cool before serving. MASTER COOKBOOK RECIPE # 597 CHRIS'S SPECIAL SEASONING: Ingredients: 2 tsp cayenne pepper 2 tsp black pepper 2 tsp white pepper 4 tsp paprika 4 tsp salt Instructions: Place seasonings in a small container with a lid and shake well.
