Ingredients Thick/Mota Sev - 1 Cup Tomato - 2 medium sized grated Ginger - 1/2 inch piece grated Green Chilli - 1 finely chopped Hing/asafoetida - a pinch Cumin seeds/Jeera - 1/2 Teaspoon Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon Coriander Powder - 1 Tablespoon Turmeric powder - 1/4 Teaspoon Red Chilli Powder - 1 Teaspoon or as per taste Fresh Curd - 2 Tablespoon Garam Masala/All spice mix - 1/4 Teaspoon Salt - as per taste Ghee/Clarified Butter - 2 Tablespoon Coriander Leaves - a handful chopped Instructions Heat ghee in a kadai or pan. Add asafoetida then cumin seeds. Let the seeds crackle. Add grated ginger and chopped green chilli. Saute it for few seconds. Now, add kasuri methi/dry fenugreek leaves, coriander powder, turmeric powder, red chilli powder. Mix well and saute. Add 1 tablespoon water to it so that masala will not burn. Cook for a minute. Add grated tomato and cook it on a high flame. Once the oil leaves from sides, add fresh curd. Mix well and cook it while stirring continuously. Bring it to boil. Then add salt and garam masala. Mix well and cook. Add 1/4 cup water, mix well and bring it to boil. Once the gravy is boiled lower the flame and add sev to it. Cover the pan and cook it for 1 to 2 minutes on a low flame.
