Hi everyone today I have brought a recipe of juicy, healthy cheese and vegetable momo in Nepali style. It is a complete momo tutorial from dough making, wrapper making, preparation of filling to pleating technique of momos.I hope you will learn to make perfect momos. Recipe instructions There are three steps First dough and wrapper making Ingredients All purpose flour 2cups Salt half tsp Oil 2 tsp Water three fourth cup Procedure In a bowl put 2 cups of flour, add salt and oil.Mix properlyFirst using half cup water knead the dough, again add almost or less than half cup water and knead till a hard but pliable dough is formed. It is necessary as after half an hour the dough becomes softer.Cover the dough with a kitchen towel and leave for half an hour.After half an hour the dough gets ready to be made wrappers. Wrapper making Knead the dough once again well.make a hole at the centre of the dough.Insert your both hands into the hole from opposite sides. Stretch the dough in a circular motion. When the dough gets stretched, cut it with a knife to make a long cylindrical dough. Stretch further pressing back and forth with palms of your hands to make longer and uniform dough cylinder.Cut the dough into two equal halves. Take one and press back and forth to stretch further to make thinner rope of dough.cut this into small pieces and flatten with palm, and roll out into wrappers. Roll the wrappers in such a way that the edges should be paper thin and centre should be thicker.It is necessary as it results perfect momos, gives proper shape and prevents the momos from breaking. Filling preparation Ingredients Finely chopped cabbage 200 g Grated carrot 100g Finely chopped capsicum 100g Finely chopped beans(optional) 100 g Finely chopped onion 200 g Amul cheeze cubes grated or cheeze sprea 1to2 tbsp Salt 1 tsp Pepper 1tsp Vegetable oil 4 tbsp Finely chopped green coriander If available 4 tbsp Procedure Transfer all these ingredients into a container, mix well at least for five minutes with your hands. It is necessary as mixing with warm hands allow the all ingredients incorporate flavours well and makes the filling juicy. When filling is ready. Go ahead with pleating of momos. Momo pleating Take a wrapper on fingers of your hand. Put the filling lengthwise. Fold into half moon.Outer part of the wrapper should be shorter than the inner part. With a thumb and an index finger pinch.When pinched, pinch area becomes a valley and a hill.Without moving thumb pull the hill towards valley with index finger and pinch.Repeat the same process for next pleating. When pinched again another valley and hill are formed.Pull the hill towards valley and pinch.This way you can complete pleating. When momos are ready, tranfer into a steamer.
