Vegan Creamy Potato Leek Soup

Tis the season for some delicious and warming vegan soups, CREAMY POTATO LEEK SOUP to be exact! It's healthy and easy to make! Soup keeps well (and may be even better) as leftovers, so you can make a big pot to last you through the week. CREAMY POTATO LEEK SOUP 6 medium potatoes, peeled and cubed 2 cups cauliflower, chopped or riced 1 bunch of leeks 1 small onion, diced 1 stalk of celery, chopped 3-4 cloves of garlic, minced ½ cup of nutritional yeast 5 cups vegetable broth 1 tsp dried rosemary 1 tsp dried thyme ½ tsp coriander powder 2 bay leaves 1-2 tablespoons fresh lemon juice 1. 1. In a large pot add ¼ inch of water and saute the garlic, leeks, onion, and celery. Saute until soft. 2. Add all the spices except nutritional yeast to the pot. 3. Add cauliflower, potatoes and vegetable broth to the pot. 4. Add enough water to make sure all vegetables are submerged in the liquid. 5. Bring to a boil and let simmer for 20 minutes or until potatoes are soft. 6. Add the nutritional yeast and stir. 7. Remove half of the soup from the pot. 8. Blend the remaining soup with an immersion blender. 9. Return the unblended vegetables back into the soup. 10. Stir in lemon juice. 11. Serve.
