Hilsa is considered as one of the most tastiest fish due to its distinctly soft oily texture, mouthwatering flavour and superb mouthfeel. The fish is locally called “Macher Raja” means the king of fish. Ilish Mach or Hilsa is not just a fish to all Bengalis, it’s an emotion! Ilish Polao or Hilsa Pulao is an extremely fragrant and delicious Bengali cuisine cooked with Ilish mach or Hilsa fish. This is one of the traditional dishes of Bangladesh. This popular Bengali whole meal has an unique combination of flavours of fresh hilsa fish and classic taste of Bengali gota groom moshla (whole garam masala).
