Recipe • 1/2 container cottage cheese • 1 cup cashews • 2 garlic cloves • 1/4 cup olive oil (add more if it looks dry) • Juice of 1/2 lemon • Salt to taste • 1 large container basil (the standard big size from Trader Joes or Whole Foods) Blend until super creamy. Add it straight to your meal or freeze in an ice cube tray for later. Warm the cubes in the microwave or toss them right into a hot pan. I use these for pesto eggs, pesto pasta, pesto chicken literally everything.
