Rich Plum Cake is a Christmas traditional fruit cake made with dried fruits, raisins, nuts & oranges. The cake is required no-alcohol, soaking of fruits in mixed fruit juices, spices and black jack. Making plum cake is our holiday tradition. I never skip a single year without making a fruit cake at home. I have made so many version of fruit cake in the past and have shared in this channel. Some of the most popular recipes are my chocolate gianduja cake, The cake has variety of Christmas dried fruits including seedless black raisins, dates, prunes, tutti frutti, candied mixed peels and orange zest. Spices like cinnamon, cloves, dry ginger and cardamom adds the warmth which the cake needs. Even though this cake has no alcohol in it, It taste absolutely delicious and moist. This plum cake can be made from start to finish in under 30 mins minus the baking time. Each year I try making different version fruit cake recipes for Christmas. Let see our recipe and simple steps. Plum cake recipe Ingredients: 450 gms flour 10 gms baking powder 1/4 teaspoon salt 9 eggs 450 gms fine white or brown sugar 450 gms unsalted butter 1/2 teaspoon cinnamon powder 1 teaspoon ginger powder 1/2 teaspoon clove powder 1 teaspoon orange or lemon zest grated 10 gms vanilla powder 10 ml plum cake essence Dry fruits & Nuts 1.2 kg fruit juice soaked dry fruits and nuts with mixed spices powder and black jack (1 cup black raisins 1/2 cup candied fruits 1/4 cup tutti frutti 1/8 cup dates 1/8 cup golden raisins 200 gms assorted nuts chopped) Caramel Syrup for black jack 2 tablespoon sugar 2 tablespoon water Instructions: Cream butter and sugar untill light and fluffy. Add egg one by one. Beat until sugar dissolves. To the flour add soaked fruits, spices, Caramel black jack and baking powder. Mix thoroughly. Fold the flour mixture into the egg mixture gently and thoroughly. Pour tge batter into a greased cake tin and bake 180 degrees Celsius for 45 to 50 minutes. Serve plain or with icing. Notes You can use any dry fruits and nuts of your choice. But do not overload for 450 gms flour you can add from 1 kg to maximum 1.5 kg dry fruits. Do not skip caramel syrup as it gives nice deep brown color and flavor to the cake. Do not add more nuts. The caramel syrup tends to thicken once made so do not give more resting time. Do not over bake as the cake might turn hard. Bake until a tooth pick inserted in the center comes out clean. Add more of black raisins for a perfect tasting plum cake. You can even add prunes.
