Originally this is a Tunisian breakfast dish. But it’s very popular in Middle Eastern region. Eggs are poached in a sauce of tomatoes and common spices. This is a quick fix breakfast/sahur option yet it seems a bit fancy. When you have eggs, and don’t want any omelette or simple fried ones, here comes the best option. Ingredients: Oil 1/4 cup Onion fine chopped 2 medium Tomatoes blended 2 medium Red chili powder 1 tbsp Salt 1 tsp Eggs 4 Cheese cubes 3 Method: In a wide pan, sauté onions in oil, when soften add spices, fry for few seconds then add tomatoes, let it simmer few minutes, then add eggs. Try not to overlap eggs with one another. Do not stir, lower down the heat to the slowest, cover the pan. Eggs will be cooked in steam in less then 10 minutes, or maximum 15 minutes. You can add cheese, for those who don’t want eggs. Don’t try to dry the tomatoes, if they’re dried, the whole shakshuka will look dried. It can be served both with bread slices or Paratha.
