Sweet Potato Hash- Easy Recipe

Sweet Potato Hash- using the sweet potatoes from our sweet potato vines. We used a lot of sweet potato vines last summer in hanging baskets and planters. As we were cleaning up and getting ready for the cooler weather, we dug up the sweet potatoes and used them to make hash. Our recipe includes smoked bacon, jalapeño, onions, parsley, and tomatoes. We softened the sweet potatoes and added them to the sautéed ingredients and baked them at 275 and added fresh local sunny side up eggs. We seasoned our hash with cayenne pepper, garlic powder, smoked paprika, salt and pepper. since we had several varieties of sweet potato vice, we were able to get a good mix of colors and textures.
