This comforting classic is perfect for family dinners, cozy nights, and irresistible comfort-food cravings. #chickenpotpie #comfortfood Ingredients: The Stew: 4 Chicken Thighs Deboned ½ tsp Thyme 1 Tbs Garlic Powder 1 Tbs Onion Powder 8 Tbs Butter 8 Tbs AP Flour 4 Cups Chicken Broth or Stock 32 oz Bag Frozen Vegetables of your choice The Biscuit Top: 6 oz Shredded Parmesan 2 Tbs Chives 2 Tbs Sugar 2 Tbs. Baking Powder 1 Tbs Garlic Powder 1 tsp Salt 2 Cups Milk 4 Cups AP Flour 2 Sticks Butter melted Description: 1. Preheat oven to 450°. 2. Turn 14 inch cast iron pan to medium heat and add a few Tbs oil. Fry chicken thighs, skin side down first, until they reach an internal temp of 160°. Set aside when done. Do not clean pan or remove fond. 3. When cool enough to handle cut Chicken into ½ cubes. 4. In the same pan on medium heat add a stick of butter and melt. Once melted add your flour and at this point never stop stirring until gravy is done. Stir roux until just starting to turn light brown. Add a pinch of salt and pepper. Always season as you go. 5. Add broth and stir until thickened. You can turn to high to quicken this step but you must not stop stirring. It will burn if you do stop. 6. When it comes to a boil add thyme, garlic and onion powder. 7. Reduce heat to low and salt and pepper to taste. 8. Add frozen vegetables and sir to incorporate. The frozen vegetables will rapidly then the gravy as it cools down so increase heat to medium and bring back to simmer. 9. Add chicken and stir to fully incorporated. Turn off the heat. 10. Let’s make the biscuit top. Mix all dry ingredients, flour, parmesan, chives, salt, sugar, baking powder, garlic powder in a mixing bowl until combined. Add milk and melted butter and mix again. 11. Spoon biscuit top over stew evenly to fully cover and bake for 15 to 20 minutes until golden brown. Check center by pulling apart to check biscuits is done. Enjoy!
