Add soaked rice and cook until 80% done (grains should still be firm). Drain and keep aside. 🔹 Step 2: Prepare the Vegetable Masala Heat oil and ghee in a pan. Add sliced onions and sauté till golden. Add ginger-garlic paste and green chili. Sauté until raw smell goes. Add chopped tomatoes and cook until soft. Add turmeric, red chili, and biryani masala. Add chopped vegetables and sauté for 2–3 mins. Add curd, salt, mint, and coriander. Mix well and cook until veggies are tender and masala thickens. 🔹 Step 3: Layering the Biryani In a heavy-bottom pot, spread half of the cooked vegetable masala. Add half the cooked rice over it. Drizzle some saffron milk, fried onions, ghee, and kewra water. Repeat the remaining masala and rice in layers. Cover tightly with a lid or seal with dough. 🔹 Step 4: Dum Cooking Place a tawa below the biryani pot and cook on low flame for 15–20 minutes.
