Roslin (My sister) Ingredients : Chicken Marination : Red Chilly Powder : 3tsp Turmeric : 1/2 tsp Ginger Garlic Paste : 1 Tb Lemon Juice : 1Tb Salt to taste Coriander Seed : 3 Tb Cumin Seed : 1tsp Pepper : 1Tb Cinnamon : 2 Clove : 5 Cardamom : 5 Fennel Seed : 1 Tb Oil Cinnamon : 1 Star Anise : 1 Fennel Seed : 1Tb Ginger Garlic Paste: 3 tsp Curry Leaf few Onion : 2 Garlic : 4Clove Turmeric Powder : 1/2 Tb Red Chilly Powder : 1 Tb Dhaniya Powder : 1 Tb Chicken 1 kg Marinated Coconut : 1/4 grated Fennel Seed : 1/2 Tb Pepper : 1/2 Tb Salt to taste Method : To make the masala dry roast cinnamon, cloves, cardamom, coriander seeds or powder, pepper corns, fennel seeds, cumin seeds and dry red chilies for a couple of minutes.Once you feel the nice aroma of the roasted spices add curry leaves Once the mixture cools down transfer this to a blender and grind it to a fine powder To make the chicken Curry heat some oil in a pan ,add 2 bay leaves then add a cup of shallots or thin sliced onions. Add some salt to quicken the process of cooking. Once the shallots are translucent add ginger garlic paste, turmeric powder, chilli powder and also add the freshly ground masala and mix it thoroughly Immediately after mixing add chopped tomatoes,required water,salt.Cover and cook until it comes to a good boil. If you want a thick gravy add less water else you can adjust accordingly. Then add the chicken pieces (preferably the one with bones to get a good taste).Again cover and cook for 20-25 minutes on a medium heat. Now make one more paste using coconut,fennel seeds and kas kas (poppy seeds). Keep it aside Once the chicken is thoroughly cooked add this coconut paste and let it come to a boil. Check salt.
