One of the most overrated holiday side dishes has to be green bean casserole—unless you’re using this recipe! Here’s how you make green bean casserole for the win. Ingredients: 1.5 lb. fresh green beans 3 bacon strips 1 stick of butter (divided) 1 yellow onion, sliced 1 cup cremini mushrooms 2 tsp chicken bouillon, ground pepper, cajun seasoing 2 tbsp fresh garlic, minced 1/4 cup all-purpose flour 3 cups whole milk 1 cup French's fried onions Instructions: 1. Cook the Bacon: Preheat the oven to 400°F. Bake bacon on a baking sheet for 15 minutes until crispy. Chop into bacon bits once cooled and sit to side. 2. Blanch the Green Beans: Fill a large bowl with ice water. In a large pot, cook green beans until bright green, about 2-3 minutes. Transfer beans to the ice bath to cool, then drain and set aside. 3. Sauté the Onion and Mushrooms: In a large saucepan over medium heat, melt 4 tbsp of butter. Add the sliced onion, add mushrooms and cook until browned, about 5 minutes, then add garlic and cook for another minute. Season, then transfer the mixture to the bowl. 4. Make the Sauce: In the same skillet, melt the remaining 4 tbsp of butter. Add the flour and whisk until golden and fragrant, about 3 minutes. Slowly whisk in the milk, seasoning with salt and pepper. Bring to a simmer, stirring until thickened, about 4 minutes. Pour the sauce over the green beans and mix to combine. 5. Bake the Casserole: Transfer everything to a baking dish. Bake at 350°F for 30 minutes. Add the fried onions and bacon bits on top, then bake for an additional 5 minutes until heated through and the rest is history.
