Ingredients 1 cup butter (2 sticks) 1 lb fettuccine pasta (See Note 1) 10 oz parmesan cheese, finely grated Instructions In a large pot bring 4 quarts of water to a boil over high heat. In another deep skillet melt the butter over medium-low heat. Add at least 2 teaspoons of kosher salt to the water. Stir to dissolve and add the dry fettuccine pasta. Cook 13 minutes, or 2 minutes if using fresh pasta. Using tongs, transfer the pasta to the skillet with melted butter, tossing to coat all over in the butter.. Turn off the heat and add the finely grated cheese, tossing the pasta gently until the cheese is melted and sauce is thick and creamy. Pour in the pasta water, a little at a time, tossing and emulsifying the sauce until silky smooth.
