let's make some yellow rice con gandules 🇵🇷❤️ Instructions: Start by washing two cups of rice and 1 can of gandules till the water runs clear. Smash 4 cloves of garlic open, cut a quarter of a red pepper and red onion. Grab your caldero or pot, add 1 1/2 tbsp of neutral oil. Place on medium to low heat. Add your garlic, onion and pepper to saute. Add 2 tbsp sofrito and 1 tbsp tomato paste, let that sauté for a couple minutes, do not burn. Add your white rice, and 3 cups of chicken broth. Also add your beans. Mix then add your additional seasonings, 1 tbsp adobo, 1 1/2 tsp salt, 2 tsp oregano, 2 tsp pepper and 2 tsp ground cumin. Mix then add a couple olives, cilantro and bay leaves. Let that come to a light boil and place the lid on and lower the heat to low. Let that cook down for 15 minutes, with the lid on. DONT touch it. After most of the water should be evaporated, flip over all the rice from the bottom to the top. Create a tower, then place aluminum foil around it and place the lid back on to steam for 15 more minutes. Dont open! Flip your rice again, then turn off your heat and leave the lid half way on. This will allow the rice to separate. Remove your herbs and peppers.
