Egg Masala - A quick and simple recipe made under 30 minutes. This spicy onion and tomato based Indian curry made with boiled eggs makes a mouth watering, flavourful and appetizing dish. This simple egg curry recipe goes well with any bread / rice. TURMERIC POWDER - 1/2 TSP 2. RED CHILLI POWDER - 1 TSP 3. SALT FOR GRAVY 1. ONION PASTE (2 MEDIUM SIZED ONIONS) 2. TOMATO PASTE (2 MEDIUM SIZED TOMATOES) 3. CASHEW NUT PASTE(15 CASHEW NUTS / KAJU) 4. GINGER GARLIC PASTE (1 TSP) 5. GREEN CHILLIES - SLIT(3) 6. RED CHILLY POWDER - 1 TBSP 7. TURMERIC POWDER - 1/2 TSP 8. CORIANDER POWDER - 1 TBSP 9. JEERA POWDER - 1 TSP 10. GARAM MASALA POWDER - 1/2 TSP 11. BOILED EGGS - 4 12. SALT - AS PER TASTE 13. OIL - 2 TBSP 14. CREAM - 1 TBSP METHOD 1. Boil eggs and peel off the shell 2. Gently poke the eggs with a fork or toothpick FRY EGGS 1. Take 1 tbsp oil in a non-stick fry pan and add turmeric powder, red chilli powder and salt 2. Add the poked boiled eggs 3. Fry for 2-3 minutes / until light golden brown on low to medium flame. CURRY / GRAVY 1. Heat 2 tbsp oil in a kadhai/pan 2. Once the oil is hot, add onion paste 3. Fry on medium to low flame until golden brown in color 4. Add tomato paste / puree - cook until it releases oil 5. Add ginger garlic paste - mix and cook on medium flame until raw smell goes. 6. Now, add coriander powder, cumin powder, salt, red chilli powder, turmeric powder, green chilies and cashew-nut paste. 7. Mix and add crushed Fenugreek leaves (Kasurimethi). 8. When it starts releasing oil, adjust consistency by adding water. 9. Add eggs. 10. Add water again, Mix well - cover and cook on a medium flame for about 8 - 10 minutes. 11. Keep mixing in intervals. 12. Add garam masala and cream (Optional). 13. Mix well and cook until it starts releasing oil. Serve with chapati or white rice.
