INGREDIENTS: 2 tablespoon coconut oil few curry leaves 1 onion chopped 1 inch ginger grated 1 Tablespoon garlic paste ½ teaspoon fenugreek seeds 250 gms prawns 1 tomato chopped Salt to taste FOR COCONUT PASTE: ½ cup grated coconut 1 serrano pepper 1 clove garlic Method: Marinate the cleaned and deveined prawns with salt, turmeric and red chili powder Grind everything under “for coconut paste” Make sure it’s a fine paste. Pour coconut oil in a clay pot and add some curry leaves, add chopped onions. Let the onions cook. Cooking in a clay pot adds a nice texture and flavor to the food. Add ginger and garlic paste and fry for 30 seconds Add turmeric, red chili powder, coriander powder and fry for another 15 seconds Add the tomato and cook until they turn soft and mushy Add tamarind extract and bring to a boil Add prawns and cook for 3 mins Add coconut paste and hot water and cook with lid on Add chopped cilantro Curry tastes best if you let it sit in the clay pot for a couple of hours.
