HIGH PROTEIN MEAL PREP MONDAY!!! BREAKFAST - egg salad: cook 8 slices bacon. from frozen, bake on 400 for ~25 min. cool on paper towel to drain grease. once cooled, chop into tiny pieces boil 12 eggs - I drop them in with a spoon right when the water is starting to boil and set a timer for 11 min. drain the water and run under cold water for 2 min. peel immediately by cracking around the entire egg and peel in 2 pieces perfectly every time add 3 eggs, 1/4 cup cottage cheese, 1 tsp dijon mustard, and 1/4 of the bacon bits to a glass container morning off, chop the egg up and mix everything together! TOTAL: 35 g protein, 395 cal LUNCH - chicken & potatoes bake: dice 2 potatoes into small cubes finely dice 1 medium onion add 1/4 of the potatoes to each container, top with 1/4 lb ground chicken, 1/4 onion, 1/2 tbsp minced garlic, and 1 tsp chipotle peppers bake on 400 for 30 min while that’s baking, shred 4 oz pepper jack stir the contents of each container and bake another 30-45 min top with cheese (it will melt no need to bake again) I really wanted to just see how little time I could take to prep lunches and this was 10-15 min of prep tops!! not the most flavorful meal, and definitely some tweaks I will make (cook potatoes, chicken, and onions only for first 30 and add the garlic and chipotle peppers before you mix for second half) but overall would recommend if you’re trying to get your protein in as quick as possible!
