Step 4: Dry the potatoes thoroughly using a salad spinner or a lint-free kitchen towel. Ensure they are completely dry to prevent oil splatter while frying. Step 5: Heat canola oil in a deep fryer or heavy-bottomed pan to 350°F (175°C). Fry the potatoes in small batches until golden brown and crispy, about 3–5 minutes per batch. Step 6: Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Step 7: While the fries are still hot, sprinkle them with garlic salt and paprika, tossing to coat evenly.
