DISH : Roasted Jeera Aloo SERVES : 4 CUISINE : INDIAN COURSE : SUBZIS / SIDE DISH .....INGREDIENTS.... 5 medium sized aloo - boiled, peeled & cubed 3 tbsp mustard oil 1.5 tsp jeera / cumin seeds 1/4 tsp asafoetida/ hing Salt - to taste 1.5 tbsp coriander powder 1 tbsp amchur / dry mango powder 1 tsp garam masala powder ..... DIRECTIONS .... 1. Boil potatoes, peel them & cut into cubes or break them with hands 2. Heat oil in a pan, add hing and jeera, let jeera crackle 3. Add ginger garlic & green chillies (garlic is optional), fry for few seconds 4. Add salt, saute them on medium heat for 2-3 minutes 5. Add coriander powder and amchur powder 6. Roast aloo with masala for 10-12 Minutes, stir in between to give an roasting taste 7. Add garam masala powder, mix well 8. Turn off heat 9.
