Remove seeds if you prefer less heat. Prepare the stuffing: Mix mashed potatoes with grounded seeds (coriander, fennel, & cumin seeds), green chilli, ginger & garlic paste, salt, red chili powder, amchur, garam masala, and chopped coriander leaves. Stuff the chilies: Fill each chili with the prepared potato stuffing. Set aside. Make the batter: In a bowl, mix besan, salt, red chili powder, turmeric powder, ajwain, and baking soda. Gradually add water to make a smooth batter (similar to pancake batter consistency). Fry the mirchi vadas: Heat oil in a deep frying pan over medium heat.
