Chicken Marinate Ingredients 1. Chicken - 1Lb 2. Yogurt - 1cup 3. Ginger garlic paste -1.5tbsp 4. Turmeric powder - 1/4tsp 5. Kashmiri red chili powder - 1tbsp 6. Chili powder -1tbsp 7. Coriander powder - 1tbsp 8. Pepper powder - 1tbsp 9. Garam masala powder - 1tbsp 10. Juice of 1 lemon 11. Orange color powder. For cooking rice 1. Basmati rice - 3 cups 2. Cinnamon - 2nos 3. Cloves - 4 nos 4. Mace - 1 no 5. Star anise - 1 no 6. Bay leaves - 5 nos 7. Cardamom - 1no 8. Salt - 1.5 Tsp 9. Oil - 1Tsp Marinate chicken tikka masala Marinated chicken Ghee - 1Tbsp Oil - 3Tbsp Onion- 2 nos Tomato - 2nos Green chili - 3nos Coriander leaves Mint - 1 cup Salt - 1tsp Instructions: To a bowl, add yogurt, ginger garlic paste, Turmeric powder, Kashmiri chili powder, garam masala powder, coriander powder, pepper powder, salt, lemon juice and food color. Mix everything well. Keep the marinated chicken for more than 2 hour. Wash the rice and soak it in the water for an hour. After 2 hrs, Take oil in a pan and cook the marinated chicken for 10 mins. Flip the chicken pieces and again cook it for 10 mins. Keep the chicken pieces aside. In the same pan add onion, sauté it for 15-29 mins. Add ginger garlic paste and tomatoes sauté it well. Add mint and cilantro and sauté well. Add 1/4 glass of water. Cook for 5 mins then add cooked chicken mix well altogether. Close with the lid for 5 mins and cook. Now pour water in pot and add soaked basmati rice along with the spices. Add salt and oil. Cook the rice until until it is 80-85% cooked. Strain the water and keep it aside. For layering the biriyani, add oil and spread the layer of basmati rice in the bottom of a pot. On this spread a layer of the cooked chicken. Spread another layer of cooked rice again spread cooked chicken on the top of the rice. Sprinkle some mint and cilantro. Now spread the last layer of rice on this and gently press it down. Spread the cooked chicken again and place some mint leaves, cilantro and fried onion. After finishing this process, cover with the lid and seal the side with the dough and place it on a heated Tawa. Cook the biriyani for 20 mins on dum on high medium flame and turn off the stove. Let it rest for 5 mins and then open the foil. Chicken Tikka Biryani is ready to be serve now.
