🥪 Ingredients: • 4 slices toast bread (cut into triangles) • 4 eggs • Salt, to taste • Black pepper (optional) • 1–2 tbsp butter or cooking oil • Grated cheese (Gouda, Mozzarella, or mixed cheese) • 1 tomato, sliced • 1 avocado, sliced • A handful of arugula (rocket) ⸻ 👨‍🍳 Instructions: 1. Heat a non-stick pan over medium heat and add butter or oil. 2. Crack the eggs into a bowl, season with salt (and pepper), and whisk well. 3. Pour the eggs into the pan to form one large omelet base. 4. Immediately place the toast triangles directly on top of the eggs. 5. Cover with a lid and cook for 4–5 minutes until the eggs are set. 6. Flip everything carefully so the toast side is on the bottom. 7. Sprinkle grated cheese over the eggs, then add tomato slices, avocado, and arugula. 8. Cover again and cook for 2–3 minutes until the cheese melts. 9.
