Raw jackfruit cooked with whole spices, yogurt masala and layered with long-grain basmati rice… absolutely irresistible! Ingredients: • 500g raw kathal (jackfruit) • 2 cups basmati rice (soaked 20 mins) • 2 onions (fried for birista) • 1 cup curd • 1 tbsp ginger-garlic paste • 2 tomatoes chopped • Whole spices (bay leaf, cloves, cardamom, cinnamon) • 1 tsp turmeric, 1 tsp red chilli • 1 tbsp biryani masala • ½ cup mint + coriander • Ghee, oil, salt Method (Short): 1. Heat oil + whole spices, add kathal and sauté. 2. Add onions, tomatoes, curd, masala → cook till oil separates. 3. Par-boil rice with salt + whole spices. 4. Layer: masala → rice → fried onions → mint → ghee. 5. Dum cook 15–20 minutes.
