Ragi Moringa Paneer Pinwheels Ingredients For the dough • Ragi flour – ½ cup • Wheat flour – ½ cup • Salt – to taste • Oil – 1 tbsp • Warm water – as needed to make a soft dough For the filling • Finely chopped moringa leaves – 4 tbsp • Grated paneer – 2 to 3 tbsp • Ghee – 1 to 1½ tbsp (soft) • Garlic – 2 tsp, very finely chopped • Chili flakes – to taste • Salt – a small pinch Method 1. In a bowl, mix ragi flour, wheat flour, salt, and oil. 2. Add warm water little by little and make a soft, pliable dough. Cover and rest for 10 minutes. 3. In another bowl, mix ghee, chopped garlic, moringa leaves, grated paneer, chili flakes, and a small pinch of salt. Mix well. 4. Divide the dough and roll it into a thin rectangle. 5. Spread the moringa-paneer mixture evenly. 6. Roll tightly into a log. 7. Slice into pinwheels. 8. Gently press each slice with your fingers to slightly flatten. 9. Cook on a tawa with a little ghee on low to medium heat until golden on both sides. 10. Serve hot.
