Today's recipe is Instant Nylon Khaman Dhokla ,the perfect recipe ,it tastes just like the store bought Dhokla...Also I haven't used any ENO in this recipe.A must try .. Ingredients & method step 1 2 cups of chickpea flour/ besan 1/4 Cup of sugar 1 tsp of Citric Acid 1/4 tsp asafoetida/hing 1/4 tsp turemeric powder/haldi 2 tsp salt mix all these ingredients well for 1 minute step 2 1 tbsp of cornflour 1 cup of water add the cornflour mix well,add the water and whisk to a smooth dough 2 tbsp of oil add the oil & mix the batter well for 1 minute cover & set aside for 30 minutes step 3 after 30 minutes ,fill enough water in your steamer,and keep it to heat on a low flame(covered) 1 & 1/2 tsp of baking powder 1/2 tsp of baking soda 1 tbsp of water Add the baking powder & baking soda to the batter ,add the water & mix the batter for 1 minute,you will notice it is now a light yellow colour.pour this into a greased 7 inch cake tin ,steam on a high flame for 20 minutes exactly. After 20 minutes turn off the heat ,let the dhokla sit in the steamer for another 5 mins.check to see if the dhokla is cooked by inserting a knife ,it should come out clean. Then take it out and let it cool to room temp.Run a knife through the edges,demold it gently.turn it to the top side as shown in the video,Cut it into desired sized squares. Step 4-Tempering/Tadka 3 tbsp oil 1 tsp mustard seeds 1/4 tsp asafoetida/hing 1 green chilli cut into small pieces 6-7 fresh curry leaves 1/2 cup of water 1/4 cup sugar 1/4 cup finely chopped fresh coriander leaves(garnish) Heat the oil in a small tadka pan,once hot add the mustard seeds,chilli,curry leaves & asafoetida.mix everything well,fry the chillies well.Gently add the water and then add the sugar,stir till the sugar melts.all of this has to be done on a low flame.turn off the heat.Pour this all over the dhokla, Granish with some finely chopped coriander. for storing the dhokla,once at room temp,store it in a steel/glass container ,it can at room temp for 24 hours,after that refrigerate the dhokla and when you want to serve it ,keep it at room temp for around 15 mins.It lasts for around 5-6 days well in the refrigerator.
