"METHI MATAR MALAI" An easier way to make a flavourful preparation..Tastier than the restaurant one.. (Without cashews) . . RECIPE For gravy, In a grinder, grind together...2 onions+ 2 green chillies+small piece of ginger+ 1 tomato. Grind this to a fine paste. Heat 2 tbsp oil/ghee in a pan.Crackle jeera, mustard seeds and hing.Now pour the grinded paste into it. Let it cook on low flame until it reduces, turns brown and leaves oil from its sides (continuous stirring for even cooking, will take around 10-12 mins) Mean while it is cooking, Take 2 cups finely chopped methi and 1 cup peas. Put them in boiling water (with a pinch of salt).We don't need to boil, just blanch. Off the flame and cover it for 2 mins. Strain it and immediately pour cold water over it (to maintain it's green vibrant color) When the gravy is cooked as in above, add salt, coriander powder and garam masala. Add methi and peas and give a good mix. Add a pinch of sugar and 1/2 cup cream. Give a good mix and let it cook for 8-10 mins.
