Add diced onion, carrots, and celery. Cook 5–7 minutes until softened. Add minced garlic and cook for 30 seconds. Simmer the broth: Add chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce to a simmer. Simmer uncovered for 15–20 minutes. Add chicken and noodles: Stir in the shredded chicken and noodles.
