Ingredients: Greek vinaigrette Chickpeas Cucumber Quinoa (precooked) Bell pepper Artichokes (I buy grilled ones from Trader Joe’s in a jar and drain them) Kalamata olives Feta Greek vinaigrette: Olive oil Lemon Red wine vinegar Oregano Salt & pepper to taste Instructions: Chop all veggies into small bite size pieces. Layer your jar with Greek vinaigrette, followed by chickpeas, cucumbers, quinoa, bell pepper, artichokes, Kalamata, olives, and feta.
