Ingredients: Boiled black chana – 2 cups Zucchini – 1 medium, chopped Mustard seeds – 1 tsp Cumin seeds – 1 tsp A pinch of heeng Salt – to taste Curry leaves – 10–12 Turmeric powder – 1 tsp Red chilli powder – 1 tsp Garam masala – 2 tsp Coriander powder – 2 tbsp Green chilli – 1, slit Coriander – chopped, for garnish Oil – 2 tbsp Method: Heat oil in a kadhai and temper with mustard seeds, cumin seeds, and heeng. Add curry leaves and green chilli. Add chopped zucchini and cook for 3–4 mins till slightly soft. Add boiled chana, all the dry spices, and salt. Mix well and cook covered for 6–7 mins on low heat till the zucchini is cooked. Garnish with chopped coriander and serve! | -------------------------------------------------------------------------- | Recipe 2 : Nutty Beans A crunchy, protein-packed sabzi with toasted peanut-sesame masala and French beans. Ingredients: French Beans – 500g (chopped) Peanuts – 2 tbsp Sesame seeds – 1 tbsp Dried red chilli – 2 Coriander seeds – 2 tbsp Cumin seeds – 1 tbsp Mustard seeds – 1 tsp Garlic juliennes – 3-4, finely chopped Onion – 1 medium, finely chopped Salt – to taste Desiccated coconut – 1½ tbsp Oil – to cook A pinch of heeng Method: Boil water in a saucepan. Add chopped beans with salt and cook for 5–6 mins till 80% done. Strain and transfer beans to ice water. In a pan, dry toast peanuts, sesame, coconut, red chillies, coriander, and cumin seeds. Blend to a coarse powder. In a pan, heat oil, add heeng and mustard seeds. Add garlic, onion; sauté briefly. Then add beans, the prepared powder, and salt. Sprinkle some water, cover, and cook for 7–8 mins till beans are soft.
