RUSSIAN POTATO SALAD INGREDIENTS •4-5 Regular Potatoes Depending on Personal Taste •1lb Bag of Carrots •4 Eggs •6-7 Pickles (Depending on your taste you can add more) •2 Regular Sized Red Onions •½lb Deli Sliced Bologna •1 Can (15oz) Green Peas •1 tbsp Dill •Sour Cream and Mayonnaise for Dressing You can use cucumbers or pickles. Sometimes the bologna is substituted with chicken, and traditionally in Russia you would use doctorskaya deli meat (Докторская). I personally don’t like peas but they are traditionally what are used in this dish. You are making a big bowl of the combined ingredients. I would like to say it makes 12 servings but I eat this by the bowl, so twelve bowls. PREPARATION Take the potatoes and carrots and clean them. Combine the carrots, potatoes, and eggs in a big pot, fill it with water and boil on high. Remove the eggs after 10 minutes or until they are hard boiled, and throw them in some cold water to cool. The carrots should be done next. Take a toothpick and the carrot should be soft enough for it to go right through with little to no resistance. Remove the potatoes once they reach the same consistency. This can take approximately 20-25 minutes. Set the ingredients aside to cool. Take 6-7 pickles and start chopping them into small pieces. You can add more depending on your taste. Start combining chopped ingredients into a big bowl. Take the onions and chop them into small pieces and combine them into the mixing bowl with the pickles. Make sure there are no big chunks of any ingredient in the bowl. Take ½lb of your sliced deli meat and chop it into small pieces and combine it into your bowl. Once your eggs, potatoes, and carrots are cooled, chop them into small pieces and combine them into the bowl. Take your peas, drain them, dry them, and add them to your bowl. Add your dill to the bowl at this time and mix the ingredients together. Salt and pepper in your mixing bowl to taste. Usually a serving is about 1 cup. Take a cup of salad mix, put it in a small bowl, and add 1 1/2 tsp sour cream and 1 1/2 tsp mayonnaise as dressing. Mix with the salad until you have an even coating. Serve with bread.
