The tender jackfruit absorbs all the spices beautifully, giving a texture similar to meat biryani. Slow dum cooking brings all the flavours together perfectly. Served with cooling raita and extra gravy, this biryani is a complete meal. A must-try for every biryani lover who enjoys bold flavours! Prep Time: 25 minutes Cooking Time: 30 minutes Total Time: 55 minutes Serves: 3–4 persons Serving Size: 1 medium bowl per person INGREDIENTS For Rice Basmati rice – 2 cups (soaked 30 minutes) Bay leaf – 2 Cinnamon stick – 1 Black cardamom – 1 Green cardamom – 2 Star anise – 1 Cloves – 3–4 Black peppercorns – 3–4 Salt – to taste Water – as required For Kathal (Jackfruit) Boiled kathal (jackfruit pieces) – 2 cups Oil – for shallow frying For Curd Marinade Thick curd – 1 cup Salt – to taste Turmeric powder – ½ tsp Kashmiri red chilli powder – 1 tsp Pav bhaji masala – 1 tsp Coriander powder – 1 tsp Cumin powder – ½ tsp For Biryani Masala Oil – as required Onion – 2 large (thinly sliced) Green chilli – 2 (chopped) Garlic – 1 tbsp (chopped) Tomatoes – 2 (chopped) Whole spices – as preferred For Layering Fried onions – from above Fresh coriander leaves – chopped Saffron milk (kesar + warm milk) – 3–4 tbsp For Sides Extra kathal gravy Curd + black salt + black pepper (raita) METHOD / PROCESS -In a cooker, add whole spices (bay leaf, cinnamon, cardamoms, star anise, cloves, pepper) with soaked basmati rice and salt. -Cook till rice is 70% cooked, drain and keep aside. -In a pan, fry sliced onions till golden brown and crisp. Remove and set aside. -In the same pan, shallow fry boiled kathal pieces till golden brown. Keep aside. -In a bowl, mix curd with salt, turmeric, Kashmiri chilli powder, pav bhaji masala, coriander powder and cumin powder. -Add fried kathal pieces to this curd mixture and coat well. -In a pan, add oil, chopped green chilli and garlic. Sauté lightly. -Add chopped tomatoes and cook till soft and mushy. -Add spices of your choice and mix well. -Add the curd–kathal mixture and cook till oil separates. -If gravy is extra, remove some and keep it aside as a side dish.
