VEGAN CHOCOLATE CHIP BANANA BREAD OATMEAL BARS! 🍌 side note: these bars were sooo good definitely 10/10 recommend!! I'm not a huge fan of banana's but I couldn't get enough of these. Extremely soft and moist! My family loved them! INGREDIENTS: Wet ingredients 1 flax eggs (1 tbsp ground flax seeds + 2½ tablespoons water) 2 medium mashed bananas (they should be brown & spotty ¼ cup coconut sugar 2 tablespoons maple syrup ½ cup almond butter or peanut butter 1 teaspoon vanilla extract ¼ cup melted coconut oil or olive oil ¼ cup dairy free milk Dry ingredients: 1 ½ cups rolled oats 1 ¼ cup oat flour 1 tsp baking powder - pinch salt 1 tbsp cinnamon ¾-1 cup chocolate chips (I used dairy free chocolate) INSTRUCTIONS: Make your flax eggs by mixing flax with water Preheat oven to 350 degrees Pour in ingredients except for chocolate chips. Mix again until just combined. Lastly fold in chocolate chips. — Pour dough and spread evenly into desired baking dish lined with parchment paper or non stick spray. Bake bars for 20-28 minutes. I baked mine for 20 minutes, poke with toothpick—should come out clean when finished cooking.
