INGREDIENTS: Ground nut 1 tbs Coriander seeds ½ tsp Fenugreek seeds 1 pinch Sesame seeds 1 tbs Green chillies 2-3 nos Garlic 4 cloves Salt To taste Cucumber pieces 1 cup Oil 2-3 tsp Mustard seeds ½ tsp Urad dal ½ tsp Chana dal ½ tsp Asafoetida 1 pinch Dry red chilly 2 nos Curry leaves 1 spring Turmeric powder 1 pinch Lime juice 1 tsp METHOD: 1. In a pan dry roast ground nut, coriander seeds, fenugreek seeds. 2. Once ground nuts are slightly coloured add sesame seeds and dry roast it, later add green chillies, roast it and transfer into mixie jar. 3. In same pan, roast garlic and transfer into blender, add salt and blend into slightly coarse mixture. 4. In a bowl, add cucumber pieces, coarse mixture and mix nicely. 5. Heat oil in a pan, add mustard seeds, urad dal, chana dal, asafoetida, dry red chilly, curry leaves, turmeric powder and saute it, switch off flame. 6. Add tempering to cucumber mixture bowl, add lime juice and mix it, later check for seasoning. 7. Now instant cucumber pickle is ready to serve.
