Vegetarian shepherds pie

Vegetarian shepherds pie Perfect for brunch, lunch or dinner and can be used as a side or main too:) If you have left over vegetables in your fridge and don't know what to do with them, why not make a vegetarian shepherds pie?! You don't necessary need to use all the vegetables I've used in my recipe. All you really need to make this dish is to have a tin of tomatoes and a tin of tomato puree. You can add your own vegetables to the dish and then make your own mash:) If you don't have sweet potato you can also use normal potato or even instant mash. PREP TIME: 10 minutes COOK TIME: 20-30 mins on 180c (until cooked and brown) VEGETABLE MIX INGREDIENTS: 3 crushed garlic cloves 1 large onion chopped Half a courgette 1 large chopped and peeled carrot 2 good handfuls of cauliflower florets Half a tin of sweet corn 3/4 of a tin of red kidney beans Sprinkle of cinnamon Sprinkle of paprika Scotch bonnet sauce (1 or 2 caps) Whole tin of tomatoes Half a tin of tomato puree 4tbs of Tikka curry paste (Waitrose Cooks') 2tbs of pineapple juice (optional) Salt and pepper (season to please) METHOD: 1. In a pan of oil add garlic cloves, onion, courgette, carrots, cauliflower, sweet corn and red kidney beans on a medium light. Stir for a few minutes until fragrant, brown and the vegetables have reduced in size. 2. Turn the heat down and add a drizzle of cinnamon and paprika, then follow by a tin of tomatoes, tomato puree, tikka curry paste, pineapple juice (optional) and salt and pepper. 3. Place a lid on top on a low heat, stir every 12 minutes and leave aside until the mash is ready. SWEET POTATO MASH INGREDIENTS: 2 large sweet potatoes (peeled and cut into small cubes) A good size knob of butter Sprinkle of paprika Splash of milk Salt and pepper (season to please) 2tbs of Parmesan cheese A good chunk of cheddar cheese to grate on top of the pie METHOD: 1. Boil the sweet potatoes for a good 12-15 minutes until soft and ready to mash! Drain and mash in a bowl; add butter, paprika, milk, Parmesan cheese and salt and pepper. Mix until combined and then your mash is ready to go! Once the mash and vegetable sauce is complete, get your baking tray (between 8-10 inches) and add a small amount of sweet potato to your first layer. The second layer is followed by the vegetable sauce and then lastly add the remaining sweet potato on top!
