[Ingredients] Chicken half Shallots Wantan Noodles Cai Xin Lard 500g Spring Onion Ginger Slices Salt Chinese Cooking Wine (ShaoXing Wine) Soya Sauce (light) 100g Sugar 1tbsp [Steps] Prepare Fried Lard *Cut lard into small pieces, wash and drain dry *Deep fry in medium low heat *When it turns lightly yellow, take out and cut into even smaller pieces *Continue frying, add some salt, until golden brown Prepare Fried Shallot *Slice shallot *Deep fry in lard oil until golden brown *Drain out excess lard oil *Spread on kitchen towel and let it cool Prepare Special Soya Sauce *Mix 100g of soya sauce (light),100g of water,sugar 1tbsp *boil and turn off the fire immediately Prepare chicken *Wash the chicken and pat dry *Marinate in salt, spring onion and chinese cooking wine (shaoxing) 1tbsp *Boil a pot of water with ginger and spring onion *Dip the chicken in the boiling water 3 times *Submerge the chicken and continue boiling with low heat for 10min (without covering the lid) *Turn off the fire after 10min, cover the lid for 15min *Submerge the chicken in ice water Final Steps *Mix 1tbsp of special soya sauce with 1tbsp of dried lard *Decorate with some cooked cairn *Cook noodles, rinse in cold water and re-boil the noodles for 3 seconds *Mix cooked noodles with soya sauce and lard *Add in the chicken, friend shallot and chicken soup Done
