My daughter—who’s been a supervisor at KFC for years—knows my ultimate winter comfort meal is chicken pot pie. 🥧❄️ So she asked me, “Why don’t you make it with Red Lobster cheddar biscuits on top?” 😍 Challenge accepted. 👩‍🍳✨ Today I cooked the chicken, mixed in the veggies, and baked it with those cheesy biscuits on top… and wow — it came out amazing. 🙌🏽🔥 New winter favorite unlocked. Great idea, mija. 💙 this recipe included no added salt, including the cooking of the chicken. No added sugar. recipe: 3 leg quarters (boiled/pressure cooker or slow cooker) then de-boned & shredded) 1 can cream of chicken (low sodium) 1/4 - 1/2 cup broth (from boiled chicken) depending on how thick you want it. 1-2 cups mixed veggies (depends on what you like it) (I used frozen not canned for lower sodium & faster than cutting by hand.) you can add your own seasoning, pepper, salt, garlic salt or powder. Again, it's to your liking. I am trying to keep easy, lower calorie, natural, low sodium & high protein. Topping: 1 package of Red Lobster cheddar biscuits (with added butter & cheddar cheese) Note: You can try other biscuits options or bypass completely for lower calorie option. Cheese is a high protein item. Some carbs in moderation.
