Grated Egg Avocado Toast 🥑🥚 by @healthymoodsf Fun and satisfying breakfast, and it’s oh so good. Hard-boiled eggs, grated over the top of mashed avocado, sprinkled with freshly grated Parmesan, chives, salt, pepper, and chili onion crunch - it’s definitely a must-try combo! Ingredients: 2 slices sourdough 1 small avocado 2 hard-boiled eggs 1 tbsp grated Parmesan A squeeze of fresh lemon juice 1 tbsp finely chopped chives Salt flakes + pepper to taste Chili onion crunch Olive oil for toasting the bread Boil the eggs for 11 minutes. Meanwhile, mash the avocado and add a squeeze of lemon juice + salt. Remove the eggs from heat and transfer them into an ice bath. Let them cool for 10 minutes. Toast up the bread in a pan coated with olive oil and follow the directions as shown in the video.
