Braised Pork Belly

[Ingredients] Pork Belly 350g Dried Shallots 70g Minced Garlic 2 cloves Rock Sugar 20g Light Soya Sauce 2tbsp Shaoxing Wine 1tbsp Five-Spice Powder 1/2 tsp Pepper 1/2 tsp Star Anise 1pc Cinnamon (a small amount) Bay leaves (1-2 pieces) Sichuan Peppercorn (small amount) Cloves (a small amount) Dark Soya Sauce 1tbsp Hard Boiled Egg 1pc [Steps] Cut the shallots into thin slices and fry them until they are slightly golden brown and set aside Cut the pork belly into half an inch thick pieces Stir-fry the pork belly pieces in a pot until they are lightly charred Add two cloves of minced garlic Add the rock sugar and fry it to coat the pork belly with caramel color Add two tablespoons of light soya sauce and one tablespoon of shaoxing wine Add half a teaspoon each of five-spice powder and pepper Add water until the pork belly is covered Add anise star, cinnamon, bay leaves, a small amount of pepper and cloves Put a tablespoon of dark soya sauce to add some color Add the fried dried shallots Add the hard boiled egg Then simmer in medium-low fire for an hour Sprinkle a little salt to taste Done
